Healthy Recipe: Fall Harvest Bowl with Creamy Balsamic Dressing


Not solely does this harvest bowl match the foliage of fall, it’s flavor-packed and crammed with good-for-you elements. The base is combined greens and brown rice with delicious toppings like apples, candy potatoes, grilled hen, goat cheese, and  walnuts—paired with a creamy balsamic dressing that provides scrumptious taste to every chew. INGREDIENTS: 

For the harvest salad: 

1 tbsp further virgin olive oil 

2 boneless skinless hen breasts 

8 cups combined greens 

2 candy potatoes, cooked and chopped 

1 apple, chopped 

⅓  cup walnuts, chopped 

2 tbsp goat cheese crumbles 

2 cups cooked brown rice 

Salt and pepper, to style 

For the creamy balsamic dressing:  

3 tbsp  balsamic vinegar 

3 tbsp further virgin olive oil  

3 tbsp fat-free Greek yogurt 

1 tsp. Dijon mustard 

1 tsp. honey 

Salt and pepper, to style 

INSTRUCTIONS: 

Add dressing right into a blender and mix till clean. Set apart. 

Pound hen breast to even thickness, then season salt and pepper. Heat olive oil in a skillet over medium warmth, then as soon as oil is shimmery add the hen breast and sear on all sides for two to three minutes till golden brown. Set apart.  

Divide the greens between bowls and assemble the sliced hen breast and remaining  elements over prime. Add a drizzle of creamy balsamic dressing and revel in!
